I Am the Empanada Master!
Last weekend I tried making some Puerto Rican empanadas. I had tried making them before, but I had a hard time draining all the fat off the ground beef so they were pretty oily. This time around, I browned the beef separately and then ran it in a strainer under hot water to rinse off the fat. Also, I was constantly tasting the meat stuffing and decided to add a lot of extra sazón (magic seasoning!). I had a hell of a time trying to find some pre-made empanada dough, but found some at the local Caputo’s. I’m to lazy to make my own! As a side sauce, I decided to make some Argentinian chimichurri sauce, which was well blended this time around next to my favorite infomercial appliance, my Magic Bullet.

Who’d have known 5 years ago that I’d love to cook so much? Now if I could only learn how to make Filipino food!!!

well, i learned the easy way of making sinigang from her mom… and she’s a good cook, too!
Filipino food is easy too cook… it does take practice and you’ll get the hang of it. i even know how to make pancit and that has like a million ingredients!!! and my pancit is GOOOD!!!

Mmm…empanadas….mmmmm. Those look yummy. Now, do you have an empanada press or do fold over and fork crimp it on your own? Because that takes some mad skillz!
Empanadas remind me of living in Panama. During my sophomore year in high school, we were allowed to go “off campus” to eat and I would always get 2 empanadas from this street cart vendor guy. I would get one for lunch (because they were pretty big) and one for an after school snack.

If you poke holes with the fork in the dough then the juice will drain out some.. My abuela and I make a shit load once a year.
