Bumblebee Cupcakes

For Melanie’s birthday bowling party, I made some bumblebee cupcakes for her, since she IS Bumblebootie. I had planned on making them last year for her, but just didn’t have time to do it. I don’t remember where I got the idea to give them almond sliver wings (maybe through my travels on the internet) but I think it really worked out. I wasn’t sure that it would work with the decorating tips I had on hand (I only have about 4 or 5 tips) but I was pleased as punch with the turnout. Ben was a very good little boy and behaved himself quite well while I labored in the kitchen to work on the mini-cupcakes. Dave was on call and I was worried that Ben would be fussy or clingy, but he just played with his toys and watched TV.

I used some banana cake mix (I have yet to make cupcakes from scratch) and though I normally make my own frosting, I was in a time crunch, so I used some pre-made chocolate frosting and some leftover frosting from the Hello Kitty cupcakes. Pre-made frosting is usually too soft and runny to decorate with, so I put in about half a cup of powdered sugar to give the frosting a little more body. I wasn’t sure if my bumblebee design would work, but the cupcakes turned out much better than I had expected. I was quite proud to give them to her!

ahhh… thanks for the explanation!!! (i take it you saw my comment on your Flickr pic.) since cupcakes are little “cakes” it would only make sense to start off using cake mix (from scratch or the box kind). i found a site with a really tasty looking green tea cupcake! i’ve started bookmarking cupcake sites, too.

Ahh yes, the green tea cupcakes! The thing is, they require matcha powder, which is finely ground green tea (or at least I think it is!). It’s not something that you can find at your grocery store, or even at asian groceries! I’ve only found it online at a hefty price. I need to go to the Japanese grocery some time…

they put matcha green tea powder in this particular smoothie i get at Jamba Juice - “Matcha Green Tea Blast”. i found a green tea bubble tea mix at the Asian grocery store… it was buried in the tea section… in a silver package. i wonder if you could substitute it with that. hrm… i don’t think there’s a Japanese grocery store in Dallas. :( i’ll have to do a search, too.

I’ve had a hankering to make cup cakes from scratch too, but I can never seem to find the time *sigh* oh well…
