Catfish St. James

Well, I don't remember if I posted it here before, but one of my New Year's Resolutions was to learn one recipe a month. I'm done with this month's recipe a little early.

I love catfish, but there don't seem to be too many good catfish recipes out there, but the recipe for Catfish St. James caught my eye, which I found on www.allrecipes.com.

Catfish St. James

4 (8 ounce) fillets catfish
1 (12 fluid ounce) can evaporated milk
1 1/2 cups all-purpose flour
1/2 cup grated Parmesan cheese
1 tablespoon Italian seasoning
2 teaspoons baking powder
1 tablespoon garlic powder
1 tablespoon ground dry mustard
1 tablespoon onion powder
salt and pepper to taste
1 cup butter, melted

1 Wash and dry catfish filets. Place filets in a shallow dish and pour milk over them. Cover and refrigerate for 6 hours or overnight.
2 Preheat oven to 400 degrees F (200 degrees C). In a large mixing bowl, combine flour, cheese, Italian seasoning, baking powder, garlic powder, dry mustard, onion powder, salt and pepper. Dredge filets in flour mixture.
3 Lightly grease a rimmed baking sheet and place coated filets in pan. Drizzle melted butter over filets.
4 Bake in preheated oven for 25 minutes, or until firm and flaky. Serve hot.

Makes 4 servings

I was a bit frazzled yesterday, trying to make dinner and juggle a chat with Derek Gray. But it all turned out OK. I know what kind of modifications to make the next time around. (Salt to taste? How can I trust my tastebuds? I need numbers!!!) I also made some rice and pasta to go along with the meal.

When Dave got home, he said to me, 'Guess what!?!?! I bought some dessert!'

I got a bit excited, because I have had a hankering for some good pie or ice cream or whatever. Those of you who know me know that I'm a BIG dessert person. So I ask, "What did you get?!?!'

And he looks intot the bag, all excited, and pulls out...

Two boxes of Nerds.

Yeah. You heard me, not tiramisu, not baked alaska, not cherries jubilee...Nerds.

I laughed, really hard. Dave was confused. I guess Nerds are an actual dessert in his world. So Nerds for dessert it was!

So he really liked the catfish. Wasn't raving about it, but he said it was really good. I'd like another crack at it. Maybe next month. But I admit, it was pretty tasty, and very juicy. I love catfish!

And guess what? The Nerds were GREAT as dessert!

That sounds yummy! It dosen't sound to hard to do either. It just takes a lot of time because you have to soak the catfish over night. I think I may try that. Thanks for the tips! :)

My husband told me that I must have learned that word from college. (I am from Texas and I went to a college out in the middle of Texas ... basically, in the middle of "hicks-ville".) But see ... you used it also! Woohoo!

that's so funny... i have yet to cook (which is the operative word) catfish in my house. i don't think i've ever done so... great job! can't wait to see what you can cook next!

I'm laughing so hard about Dave pulling out Nerds for dessert that egg salad is coming out my nose.

Congrats on the 'catfish st james' - that's pretty funny too, but in a different way. Rice and pasta, eh? Is that your idea of veggies? ;)

nerds???? GHETTO. that's just GHETTO. hahahahaha...but it's expected. good job sister! next time, bake the catfish with just butter and SEASONED SALT. i cooked that when i was at school. soooooo good. just don't overkill with the salt ;)

Maricel - I only use "hankering" when I really have the taste for something. Also, whenever said out loud, I always use a Southern Drawl.

Chariya - Right?? Brings ya back to Catholic grade school!

Noelle - Well, they both come from things that grow from the ground. Doesn't that make them related to vegetables?

and doing it in a more or less viagra deliberately goofy, off-the-cuff, didrex laid-back kind of way, I was able fioricet to come at it without my defenses xenical up, without being as critical or ultram judgemental. It didnt have to be meridia sublime - it was fun. It didn't phentermine
